Santa Fe Soup

So, there are a bunch of versions of this soup...but this is the one I have, and we love it.You literally just dump everything in the pot. It's even better the next day! 

2 lbs ground beef (or turkey) 
1 onion, chopped 
2 packets of ranch seasoning 
2 packets of taco seasoning 
1 16 oz can black beans 
1 16 oz can kidney beans 
1 16 oz can pinto beans 
1 16 oz can tomato wedgets 
2 16 oz cans white shoe peg corn 
1 can original Rotel 
2 cups water (if needed)

Cook meat with onion. Drain. In a large pot, add all ingredients (including meat+onions). Stir, then cook til heated through (the longer it simmers, the more the flavors will combine). Optional - serve with tortilla chips, shredded cheese, & sour cream. Yum!
