Bean Salsa Medley

Ingredients:

  • 1 can on black beans, drained
  • 1 can of pinto beans, drained
  • 1 can of garbanzo beans, drained
  • 3 cloves of garlic, chopped fine
  • 1/2 cup of green pepper, chopped
  • 1/2 cup of red onion, chopped
  • 1 cup of cauliflower, chopped
  • 1/4 cup of cilantro, chopped
  • 1/2 cup of extra virgin olive oil
  • 1/4 cup of balsamic vinegar
  • the juice of one lime
  • salt and pepper to taste

Directions:

Just mix everything together. :) If you don’t like the ratios, add more veggies or add more vinegar. You are free to be creative on this one!

The longer it sits together in the fridge, the better it tastes. But like, don’t leave it for a month. One week, tops. But it won’t last that long- you’ll eat it up!

Eat it on crackers or just plain or even as a salsa over grilled chicken.
