Mom's Creamy Potato Soup
Ingredients
4 cups peeled, cubed potatoes
1 c. celery chopped
1 c. coarsely chopped onions
2 cups chicken broth
2 t. salt
1 c. milk
1 c. whipping cream
3 T. butter, melted
1 T. parsley flaked
1/8 t. pepper
Optional sharp cheddar cheese
Combine potatoes, celery, onion, chicken broth, and salt in dutch oven. Simmer, covered, about 20 min or until potatoes are tender. Mash mixture once or twice w/ a potato masher leaving some vegetables whole. Stir in remaining ingredients; return to heat and cook, constantly stirring until soup is thoroughly heated. Serve with grated sharp cheddar cheese on top.
Gran's Quick Recipe:
Use hashbrowns, cream of chicken soup, cream of celery soup and chicken broth instead.
